Mixed Vegetable Cutlet


Ingredients

Mixed vegetables(Carrot, Beans, Corn, Green peas, Cauliflower all together chopped) - 1/2 kg
Oil - 2 tbsp
Onion(medium) - 3 nos(finely chopped)
Ginger(chopped) - 2 tbsp
Green chillies - 5 nos(chopped)
Curry leaves(chopped) - 2 tbsp
Potato(medium) - 2 nos(boiled and mashed)
Salt - As reqd
Garam masala - 1 tsp
Maida - 2 tbsp
Bread crumbs - 2 cups
Oil - 2 cups

Method
1)Cook the potatoes, peel the skin, mash them and keep it aside.

2)Heat 2 tbsp oil in a pan.

3)Add chopped onion, ginger, green chillies and curry leaves and saute well by adding salt.

4)Add chopped vegetables and saute till it is cooked and mixed well.

5)Add garam masala and remove it from fire and allow it to cool.

6)Add mashed potato to the veg mixture and mix it well.

:- You can make the cutlet more tastier by adding little bread crumbs while mixing.

7)Mix maida with little salt and add water to make a thin batter.

8)Make balls out of the cutlet mix and shape it into oval shaped cutlets.

9)Dip the cutlets in maida batter (make sure that the batter is so thin), coat it with bread crumbs and fry it in oil.
Serve hot with tomato sauce.
